When your VIP expires your products will no longer be visible in the shop (but products already purchased can still be used). When you renew, all your products will become visible again. As for your tier, it could depend how long you go without VIP. Tiers are updated every month and use data from the previous three months, so if you didn't submit or sell any products for a month you would get less points in those areas.
